This is a natural method of extracting caffeine from the bean. The green coffee bean is first swollen with steam to facilitate the extraction of the caffeine. This is done by bathing it in \u003cstrong\u003esugar cane ethyl acetate\u003c\/strong\u003e and then the bean is dried again to the temperature it was at before decaffeination.\u003c\/p\u003e\n\n\u003cp\u003e \u003cstrong\u003eThe decaffeinated coffee retains most of its aromas through this process. We taste chocolate cookies, sugar cane and blackberry. The decaf has a fine acidity and a lot of sweetness.
