Description

First of all, this is a completely new Boa Vista Microlot and not the anaerobically processed Natural, which we have had in our range in recent years.

We are very happy to finally have a microlot from Mateus and his Sitio Boa Vista in our range again. This dry-processed Arabica of the Arara variety is only available exclusively from us. We are very pleased about the long-term partnership with Sitio Boa Vista and Timo from Petunia Coffee.

Arara is a relatively new variety that is increasingly attracting attention from farmers due to its cup quality, productivity and resistance to coffee rust.

This filter coffee impresses with its great aromas. If you like chocolatey coffees, you'll get your money's worth here. However, this natural also surprises with great fruit notes and a fine acidity that we don't necessarily know from Brazilian coffees. The sweetness is very well pronounced and the mouthfeel is creamy and soft. An aftertaste of dark chocolate lingers on the tongue for a long time.

This was made possibleDirect importby Timo Plötz, a coffee farmer from Franconia ;) Timo now lives with his family in Brazil and promotes direct trade in his region, Sul de Minas. Big thanks also to Touton Specialty Coffee, who supported us with the import.

The Sitio Boa Vista of Mateus is located about 2 km from the town of Petunia, a district of the municipality of Nova Resende, in the south of the state of Minas Gerais, about 70 kilometers northwest of Guaxupe, one of the centers of Brazilian coffee production. The 3,000 inhabitants of the town and the surrounding farms have been fighting for years for the asphalting of the still unpaved section of the federal highway MG-446.

In the hilly region, at 950 - 1300 meters, there are mainly family-run farms and small businesses whose coffee plantations have great quality potential. This includes the 8-hectare Sitio Boa Vista, which is run by Mateus.

Brew Advice

Graycano, V60, Origami, Kalita, Fellow X:

  • Brew Ratio 15g coffee - 250g water; temperature 93°; 24 clicks C40 MK4
  • 0:00 - 0:10 - 50ml - Swirl
  • 0:10 - 0:45 - (Blooming)
  • 0:45 - 1:00 - 100ml
  • 1:15 - 1:25 - 50ml
  • 1:45 - 1:55 - 50ml - then swirl
  • 2:45 - finished

The recipe works just as well with 18g/300ml; in this case pour in 60ml/120ml steps and grind a little coarser (23/24 clicks)

AeroPress:

  • AeroPress inverted.
  • 18g coffee; ( 25 clicks) ; 170ml water; 90°
  • 0:00 - 0:30 add 50ml water and stir slowly 5 times
  • 0:30 - 1:00 and fill up to 170ml, stir 10 times, then put the filter on, let the air out and place on the server.
  • Start pressing slowly at 1:30 minutes and finish at 2:00 minutes.
  • then pour in 50ml (slightly cooled) water from the kettle

Chemex 3 Cup:

  • 20g coffee;
  • 330ml water,
  • Water temperature 95°;
  • 3:30 minutes extraction time including blooming;
  • 3 pours

Hario Switch 03

  • 25g coffee (25 clicks) ;
  • 400ml water (94°)
  • Bloom 80g water 35s;
  • Fill in the remaining water completely;
  • Let it steep for 2 minutes;
  • Stir a few times around the top with a spoon;
  • let water run through at 2:50.

The run through time should be a maximum of 1 minute (adjust the grinding level if necessary)

Brasiliens bester Kaffee

Da ich Mateus persönlich kenne, ist es jedes Mal ein Genuss seinen Kaffee zu trinken. Das Schöne ist auch, dass jede Ernte anders schmeckt.

Wer Specialty Coffee aus Brasilien genießen möchte, aber geschmacklich eher klassisch unterwegs ist, hat hier den perfekten Kaffee dafür.
