Absolutely unique! An anaerobic natural from Kenya!

After this coffee was so well received last year and sold out so quickly, we bought a lot more of it this year.

We are incredibly happy about this great coffee. We think it's even better this year! The Chepsangor Hills is the first of three Kenyan coffees that we will be bringing out this year.

For a very long time, naturals were not allowed to be produced in Kenya. Only washed coffees were allowed. Only recently, however, coffees in Kenya have been allowed to be processed dry. Therefore,Naturals from Kenya are 'still' considered a rarity.

We tastesweet, ripe grapes and plums, accompanied byStone fruits, cranberry and some currants, slight nuances ofCashew nutsand anice juicy finish.

An incredibly delicious,balanced coffeewith a good mouthfeel! The body isjuicyand pleasantly soft. TheAcidity and sweetness very harmonious. Greatcomplex coffee, Excellentyummy!

A small special feature in the processing of theChepsangor Hillsto offer in addition.Immediately after harvest, the cherries are fermented anaerobically in black bags (sleeping bags) for five daysThe perfect balance has been found here. The coffee does not taste over-fermented in any way, butsuper harmonious, super sweet and super fruity.

Chepsangor Hills is located in Nandi County in western Kenya. The farm is owned by Dr. Rosebella Langat and her husband. They grow coffee themselves and work directly with the coffee farmers to find the best beans available. They started growing in 2016 and brought the coffee to the Kabsaos cooperative for pulping. Currently, Chepsangor Hills is one of the most professional projects in the region. It promotes the sustainable growth of coffee through environmentally friendly and agricultural practices. Special features Rosebella's vision is to help local communities, especially women, achieve sustainable social, environmental and economic empowerment. They have a compost project for organic fertilizer. They also use a greenhouse with multi-layered sun drying beds so that the naturals can be dried faster and independent of rain. The coffee is imported in 30 kg jute bags. The sleeping bag coffee is even vacuum packed.

Brew Advice

Graycano, V60, Origami, Kalita, Fellow X:

  • Brew Ratio 15g coffee - 250g water; temperature 93°; 22 clicks C40 MK4
  • 0:00 - 0:10 - 50ml - Swirl
  • 0:10 - 0:45 - (Blooming)
  • 0:45 - 1:00 - 100ml
  • 1:15 - 1:25 - 50ml
  • 1:45 - 1:55 - 50ml - then swirl
  • 2:45 - finished

The recipe works just as well with 18g/300ml; in this case pour in 60ml/120ml steps and grind a little coarser (23/24 clicks)

AeroPress:

  • AeroPress inverted.
  • 15g coffee; ( 22 clicks) ; 220ml water; 88°
  • 0:00 - 0:30 add 50ml water and stir slowly 5 times
  • 0:30 - 1:00 and fill up to 220ml, stir 5 times, then add filter and place on server
  • Start pressing slowly at 1:10 minutes and finish at 1:40 minutes.

Hario Switch 03

  • 25g coffee (25 clicks) ; 400ml water (94°)
  • Bloom 75g for 30s, then fill with water completely; let it brew for 2:30 minutes; stir a few times at the top with a spoon
  • Let water run through for 3:00 minutes.

The run through time should be a maximum of 1 minute (adjust the grinding level if necessary)
