Our EL TREBOL is a real specialty coffee decaf.

ThisDecafcomes from the regionSantander in Colombia by the 'Women Association EL Trebol'The women's association 'El Trebol' consists of 74 farms run by women. The women work on their farms as pickers and farm administrators. They depend on growing coffee to feed their families. The association was created out of the need to sell the coffee above the market price.

OurEL TREBOL DECAFis produced using the sugar cane methodSugar Cane EAdecaffeinated. This is a natural method of releasing the caffeine from the bean. The green coffee bean is first swollen with steam to facilitate the extraction of the caffeine. This is done by bathing it inSugar cane ethyl acetateand then the bean is dried again to the level it was at before decaffeination.

The decaffeinated coffee retains most of its aromas through this process. We taste chocolate cookies, sugar cane and blackberry. The decaf has a fine, subtle acidity and a lot of sweetness.

  • Brew Ratio 1:16; 20g coffee - 320ml water; temperature 95°; 24 clicks
  • 0:00 - 0:15 60ml
  • 0:15 - 0:40 Bloom
  • 0:40 - 1:50 Pour 240ml water in slow circular movements
  • at 2:00 short spin
  • 3:30 finished

AeroPress:

  • AeroPress inverted.
  • 17g coffee; ( 20 clicks)
  • Pour in 65ml water (89°)
  • Stir briefly and fill up to 220ml, stir again
  • Start pressing slowly at 1:10 minutes and finish at 1:45 minutes.

Chemex 3 Cup

  • 20g coffee
  • 330ml water
  • Water temperature 95°
  • 3:30 minutes extraction time including blooming
  • 3 pours

  • 25g coffee (25 clicks)
  • 400ml water (95°)
  • No Bloom
  • Fill water completely
  • Let it brew for 2 minutes
  • Stir a few times at the top with a spoon
  • let water run through at 2:50.
