While the BOA VISTA - Anaerobic Natural has been available in the shop as filter coffee and espresso for a while, we now also have the BOA VISTA - Anaerobic Honey as an Omni Roast in our range.
Both are transparent direct imports. We bought these microlots directly from Sitio Boa Vista in Nova Resende. In the hilly region at 950 - 1300 meters above all family-run farms and small businesses are located, whose coffee plantations show great potential for quality. This includes the 8-hectare Sitio Boa Vista managed by Mateus.
Mateus fermented this coffee with Lalcafe yeast under anaerobic conditions. For this purpose, the yeast batch was first activated and then the coffee cherries or the depulped coffee beans were filled into a 200 liter tank. During the process, the coffees were wetted with the yeast mixture. The tank was then gassed with Co2 in order to ensure a process with as little oxygen as possible. The natural was fermented for 72 hours and the honey for 48 hours.
